Sugar Cookie Bars

These are really simple and fast cookie bars to make that take a lot less time than traditional sugar cookies. I am not a fan of rolling, chilling and re rolling cookie dough. I like these better than the traditional cookies as they were very soft and perfectly chewy.

I whipped these up at about eleven o’clock at night after a batch of florentines went wrong! I wanted to bring some cookies with me when I went to see a friends new baby. I used the oatmeal cookie recipe from The Cookiepedia.
