I’m finally back from vacation! I have so so many cupcake pictures to share. I’m actually afraid to count how many bakeries I visited in the span of two weeks! As usual I bought tons of American baking goodies to take back with me to London so watch out for some fun stuff in the next few weeks.
I brought back a bottle of orange sanding sugar so these little pumpkin cupcakes were a perfect Halloween choice! You can also make your own by mixing some orange gel color into a bag of sugar and letting it dry. I used chocolate covered Mikado sticks for the little pumpkin stems.
I used this vanilla cake recipe and tinted the frosting a light orange. It made about 18 cupcakes (baked for 18-22 minutes). They turned out super tasty and fluffy but since they’re white cupcakes they weren’t too sturdy once unwrapped. I would probably use a yellow cake recipe next time.

A box of Mikado sticks will only set you back 99p.
The orange sanding sugar is a little more difficult to find in the UK though.
Once the cupcakes have cooled. Frost with a spatula, making a round dome shape. Pour the sanding sugar into a small bowl and the cupcake (and the edges) evenly in the sugar. Break off the tip of the Mikado stick and insert into the center. Using a toothpick gently make the grooves on the sides.
